Cold brew coffee has become increasingly popular in recent years, due in part to its lower acidity level.

However, it is important to note that the extraction process of cold brew coffee can release some of the traditionally nuanced high notes, which may make the flavor taste more acidic. 

Additionally, the beans being a lighter roast can also make it more “acidic” tasting. Lastly, coffees from a higher elevation (i.e. Ethiopian coffees) are also typically more acidic in taste.

All of these factors should be taken into consideration when determining whether or not cold brew coffee is the right choice for you.

Roast

The roast you use for your cold brew coffee can have an impact on the final taste of the beverage. Lighter roasts tend to be more acidic, while darker roasts have a less acidic taste.

This is due to the way that the flavor develops in the beans. Darker roasts allow for a fuller bodied taste, which balances out the acidity. 

When brewing cold brew coffee, it is best to use a dark roast in order to achieve the desired flavor profile. mind you, it’s just the taste. This doesn’t mean there is actually less acid in the beans. 

A darker roast allows the flavor in the beans to develop a little more. This fuller bodied taste is what balances out the flavor.

A lighter roast leaves the way open for a more open, brighter taste. However, for cold brew a dark roast is better.

What’s the difference between cold brew and iced coffee?

While all the answers below are basically correct, better is a matter of opinion. Cold brew definitely is less bitter than iced coffee, and I cold brew also uses about 2xs the beans, so it cost double (if you brew at home). 

I drink coffee black, but if you like it sweetened, it is easier to add to hot brew, then pour over ice if you like it cold.

You can heat cold brew and it will be less bitter than percolated coffee, but it isn’t worth the time and planning involved for me. When I want a cup of coffee, standard percolated is 5 minutes away. Cold brew takes 8-12 hours.

Next, grind the beans slightly finer than you would for other brewing methods. This will create more surface area on the beans, allowing the water to extract more of the coffee’s flavors and aromas. 

Let you cold brew steep for longer

Finally, allow your cold brew to steep for a longer period of time – up to 24 hours – and do so at a slightly higher temperature. This will speed up the extraction process and result in a more acidic cup of coffee.

Let it steep outside the fridge 

Steep the coffee outside of the fridge in an area that is not near any heat sources.

Make smaller batches

Make smaller batches and only brew what you will drink within a day or two.

Coffee doesn’t need to taste like a punch in the face. If it’s too strong, add a little water. Don’t let anyone tell you how to drink your own beverage.

The same goes for whiskey,the right way is the way that feels good. So if you prefer your cold brew coffee a little weaker, don’t be afraid to water it down to suit your taste.
